Lots of families try to avoid eating meat due to health reasons, cost, or even the season of Lent. Personally, I am preparing for Lent, and I know that meal planning (especially meatless meals) for my family can be a challenge sometimes. Truth be told, we tend to eat the same meals over and over due to the kids’ likes and dislikes.
So, to get ready for these upcoming meals, I have started brainstorming some family-friendly meatless meal ideas. I hope that many of our readers can benefit from these ideas, too.
Meatless Breakfast Meals
- Scrambled Eggs and Potatoes (plain or in a taco)
- Bean and Cheese Tacos (my kids’ favorite)
- Boiled Eggs and Toast
- Oatmeal (Our favorite add-ins: cinnamon, raisins, and walnuts)
- Favorite Cereal with milk
- French Toast and Berries (Here’s an easy French Toast Recipe from Country Recipe Book)
- Pancakes or Waffles
- Muffins
Meatless Lunch Meals
- Tuna Sandwiches
- Peanut Butter and Jelly Sandwiches
- Peanut Butter and Banana Sandwiches
- Grilled Cheese Sandwiches
- Macaroni and Cheese
- Cheese Quesadillas or these Black Bean Quesadillas
- Baked Potato (Toppings: butter, sour cream, shredded cheese, chives)
Meatless Dinner Meals
- Tuna Casserole
- Salmon patties (canned salmon)
- Fish tacos
- Tortellini with alfredo sauce
- Spaghetti or other favorite pasta and sauce
- Cheese Ravioli
- Cheese Enchiladas
- Veggie or Cheese Pizza
- Chalupas (Beans, cheese, lettuce, and tomato on a chalupa shell)
- Chili Beans (with no meat) or bean soup
- Grilled fish, shrimp, or salmon
Of course, these meatless breakfast, lunch, and dinner ideas are always interchangeable!
Meatless Hearty Snacks
- Nachos (Refried beans and cheese on tortilla chips. Optional: jalapenos or black olives)
- String Cheese and Fruit
- Peanut Butter with Apple Slices
- Bread Pudding
