Tasty Tuesday - Chicken Jalapeno Popper CasseroleIt’s #TastyTuesday and today we are sharing a super easy recipe that your whole family will enjoy!

Don’t let the name fool you:

although it does have fresh Jalapeño –

there is not too much heat. 

Ingredient List: 

  • 1 Bag Tyson Grilled Ready Diced Chicken Breast 
  • 8 oz. Cream Cheese 
  • 16 oz. Bowtie Pasta
  • 2 cups of your favorite cheese  (I like the Colby Jack mixed bag!) 
  • 1 Cup Water 
  • 1/2 Cup Milk 
  • 1 Fresh Jalapeño – de-veined, de-seeded, and diced. 
  • 1 Fresh Jalapeño – sliced
  • Bread Crumbs 

 

Directions: 

  1. Preheat Oven to 350 Degrees
  2. Prep a 9×13 baking dish by coating it with your favorite non-stick spray
  3. Prepare Bowtie Pasta according to package directions – al dente.
  4. In a separate sauce pan, heat water, milk, and cream cheese over medium to medium-low heat, stirring until smooth
  5. Once you’ve achieved a velvety texture, mix in the shredded cheese. Stir until melted.
  6. Add the Chicken (frozen OR thawed) & diced Jalapeño to the cheese sauce
  7. Once pasta is done, drain and spread in the bottom of your 9×13 pan. Mix in the chicken & cheese mixture. 
  8. Sprinkle Bread Crumbs on top – enough to cover the top of the pasta mixture. ( I don’t measure this – I just sprinkle on top until I feel like there is enough!
  9. Take the second, sliced, Jalapeño and add a layer to the top of the mixture/bread crumbs. This is where you can customize to your liking: some like it hot – add a complete layer! Or, if you are like me (or your kiddo’s haven’t quite developed their Texas taste buds) you can leave the sliced jalapeño off of half (or the entire dish).
  10. Cover and bake for 20 minutes. After 20 minutes, uncover and cook for an additional 10 minutes.
