Elisabeth is so excited to be living her best life in Corpus Christi. After years of visiting the beaches of the Coastal Bend, she is loving the salty air, sandy toes, and wind in her hair.

No stranger to City Moms Blog Network, she began contributing to Austin Moms Blog in 2012 and is thrilled to continue the sisterhood here in Corpus Christi! She is married to Rad Brad and has two boys, Hudson and Finn.

Elisabeth enjoys all kinds of music, singing at the top of her lungs – especially in the school drop off line when the kids are getting out of the car – being outdoors as much as possible and is a complete and total advocate of NOT having a television in the living room.

Jennifer Mahan

Community Engagement Coordinator & Senior Contributor

Jennifer is a Coastal Bend Native, born and raised in Ingleside. She began contributing to the Corpus Christi Moms Blog in 2018 and stepped up as the Community Engagement Coordinator in 2019.

She is happiest when she is crafting, writing, or doing anything artistic. She loves music, especially ANYTHING from the 90’s, and is often seen dancing around the kitchen to ‘Nsync while cooking dinner.

She is married to Derik and has two kids, Connor and Keeley. Jennifer still feels like a novice when it comes to parenting and enjoys letting other moms know they are not doing life alone. She also admits she watches copious amounts of Netflix, but balances that out by reading to and with her kiddos as much as possible each day.

Jennifer Eason

Events Assistant

Jennifer Eason was raised in Corpus Christi, Texas. She is married to the love of her life, Daryl Eason, and they have 3 fantastic boys. They are affectionately known as #TeamEason. In 2010 our team grew with our first son and then in 2013 our twin boys arrived. Our faith in Jesus Christ is what has kept us together, growing and thriving as a family.

During my pregnancy with the twins, my heart grew for moms of all seasons. Being a mom is the most rewarding and challenging title. When the opportunity came to serve as part of the events team with CC Moms Blog I jumped at the chance because I wanted to connect with other moms and be able to help in all capacities.

In my extra time, I run a home boutique – Jenn E’s Boutique – and assist my husband in his business Daryl Eason Music.

My passions vary from my family, empowering other women/moms and shopping. I used to love Target but there’s no more popcorn so ehhhh 🤣

Erin Hawkins

Erin grew up in West Texas and met her husband there in college. She and J. have been married for 24 years and have lived all over Texas and the Caribbean. She settled in Corpus about 6 years ago and loves being close to the beach once again. Erin’s son arrived when she was 39, so she’s a late-comer to the mommy party!

Erin has been writing in some form for most of her professional career, including for TV news, press releases and commercials. She joined CCMB to learn more about blogging. She also contributes videos of CCMB events.

Likes: Weezer, avocados, nerd humor, reading, cooking, eating and wine. Dislikes: people who drive slow in the fast lane and being late.

Paulina Coy

Paulina was born and raised in Mexico City. She married her husband, Bruce, in 2009 down in Mexico and at the begining of 2010 they moved to the States. Together they have 4 boys: Evan in Heaven, Ethan 6, Jason 5, and Jackson 3.

They moved to the Coastal Bend 2.5 years ago to open Snowie Bus of Corpus Christi. They homeschool the kids and live a very laid back life. They dream of full-time traveling sometime in the not to distant future.

Paulina has recently discovered a love of woodworking and kind of accidentally started Coy Woodworks. She also LOVES Netflix, sleeping, slow mornings, unbusy schedules, coffee, Audible, and being indoors!
She is an introvert at heart and can spend days at a time at home with no need to go anywhere. The boys not much so she is always on the look out for fun activities and adventures!

Tracie Brewer

Tracie was born and raised in Saginaw, TX and spent 15 years in Austin before moving to CC in January of 2017. She has four kids…Ashlen and Blake are both in their twenties (still in Austin), Mackenzie (13), and Layton (10). 

Tracie’s husband, Cory, and she were both born and raised in Ft. Worth. Tracie has a unique perspective on parenting due to the fact that her children are so far apart in age… in a sense, she got a “redo.”

She loves working out, reading traveling, and surrounding herself with all different types of people. She really enjoys wine and writing….they are both cheaper than therapy.

Tracie doesn’t like to take herself too seriously and prefers to surround herself with people who like to laugh and have fun! Welcome to her crazy life!

Ashley Valadez

Ashley was born and raised in the Coastal Bend, graduating from both High School and College in the area. She currently lives out in the country with her husband of 8 years, her two sons (who are 2.5 and 5) and their dog.

In her spare time, Ashley loves to camp and hike, read, drink really good coffee, thrift shop, and watch Netflix with her hubs. Ashley is passionate about connecting moms and fostering community, and she believes that motherhood is much easier when we do not do it alone.

Ashley also runs @CollaborativeMotherhood where she aims to connect and inspire women in all seasons of motherhood.

Daniella Mungia

Daniella was born in Missouri but raised in Corpus Christi, Texas. She is a loving wife to Marc Anthony Mungia of 2 years and mama to 19 month old Jayden Legend Mungia and baby Sebastian on the way (due October 2019).

During her spare time you will find her taking pictures for her part time business (JLM Photography), long walks down every aisle at Target or something involving baseball. She has been a stay at home mom since Jayden was born and enjoys being able to witness every milestone he has accomplished.

She’s found her way through the journey of parenting with blogging. She is extremely excited to be a contributor to the Corpus Christi Moms blog, and hopes to inspire other moms in the community.

Emily Schofield

Emily is new to the Coastal Bend area but enjoys everything it has to offer! Emily and her husband Landon both grew up in Idaho, and came to Kingsville for her husband’s job as a range and wildlife biologist. Emily graduated with her BSN from Brigham Young University-Idaho.

Emily has two amazing children, Ashton (6) and Brooks (16 months). Emily has been a SAHM since Brooks was born and is returning to the nursing field this Fall. She also runs a blog and social media account called @thebackyardadventurers.

When she isn’t adventuring with her family, she loves faking insomnia with a good book, trying (and sometimes failing) new recipes, listening to podcasts and taking a bubble bath.


Jessica Davila

Jessica has lived in Corpus Christi almost all her life and loves it. Together with her husband Roy they are raising their beautiful, almost 6-year-old daughter, Angelina. Being a stay at home mom has taught her a lot and she treasures each moment of motherhood.

Jessica is quiet in person, but give her a pen and paper and she will write a novel. She loves reading, writing, watching movies and listening to music. She is a die-hard Dallas Cowboys fan and loves anything chocolate.

She is very excited to begin her blogging adventure and getting to know the CCMB community of mommas.



LaToya Rodriguez

LaToya is loving life in Corpus Christi. Although she is not a native Texan she claims she got here as fast as she could! She graduated high school and college in Corpus Christi, and considered moving, as a newlywed but decided to stay close to family and friends.

She easily makes new friends everywhere she goes and is extremely excited to be apart of the CC Moms Blog.

As a working wife and mother of two, she is always on the go. You will most likely catch her jamming to gangsta rap when her kids aren’t around, at the beach with her family, or representing Aflac at local events. She loves the outdoors, but enjoys a good Netflix binge, or reading a book in one sitting.


Madison O'Brien

Madison is a Texas A&M Graduate who is beginning her 6th year as a Technical Theatre teacher and 3rd year at Gregory-Portland High School.

She and her wife moved to the coastal bend to be closer to family as they began the fertility process to grow their family. Madison and her wife were thrilled to welcome their daughter, Amelia, to the family in May via Reciprocal IVF.

Madison has also begun working toward her Masters degree in Educational Administration at TAMUCC (gotta keep it in the Aggie family!) Talk about one busy mama!

Madison enjoys time outside and has always loved to write for her own personal blog in her free time. She is so excited to start this new adventure of motherhood and to be joining the wonderful community of Corpus Christi Moms on the blog!

Marissa Ackerman

Marissa Ackerman is a Texas native who has lived in Corpus Christi, San Marcos, Austin, and Houston. She is a graduate of Texas State University, married, and has one son.

When she is not busy working on restaurant partnerships as an Account Executive for Favor Delivery, she spends time traveling, painting, writing, and working as a freelance marketing consultant.

Christine Hood

Christine, a native New Yorker, moved to Calallen in 2017 after her husband Chris retired from the Army. They have a 19 year old daughter named Taylor who graduated from Calallen High School and played on the Varsity Soccer Team and an 8 year old son, named CJ who is headed for the 3rd grade at East Elementary and is a Green Belt in Tae Kwon Do.

Christine received her Bachelor’s Degree in English and Secondary Education from Boston College and after a short stint with the New York City Board of Education, she spent almost 10 years in Corporate America. When she and Chris married, she left her job to travel the country with him and became a stay at home wife, mom and volunteer. Now that they have finally settled, she is pursuing her Cosmetology License at Bella Beauty College.

Her hobbies include crafting, sewing, playing with make up and hair, drinking coffee and of course, friend and family time on the back porch! Her favorite place is the beach and her favorite colors are animal print and glitter! The things she hates the most about South Texas are: 5 foot (ok, maybe a little exaggerated) flying roaches, tarantulas and fire ants! The things she loves most are: the beach, the sun, the heat and HEB! She is honored and excited to be a part of the CCMB team and looks forward to meeting so many new people and learning more about our great area!

Beth Ramos

Prior to starting Corpus Christi Moms Blog, Beth studied marketing at Texas A&M University {Gig’em!} and earned her MBA from Texas A&M University-Corpus Christi {Go Islanders!}. She spent her career working local corporate gigs, doing marketing consulting, and teaching yoga before she, her husband, and their two kitty cat fur babies welcomed their son {2015}.

Beth spends her days learning to balance life as a mom to two. Despite being a native of Corpus Christi, she hates seafood {gasp!} but is always down for Mexican food and a good margarita!

When family allows, Beth loves practicing yoga, cooking something new, and sleeping.
