Our Family’s Favorite Farmhouse Summer Recipe

Summer. The time when you do not want to heat up your house with cooking.

Growing up, summer was a great time for pasta salads and lemonade. My favorite pasta salad to make is Zesty Italian Pasta Salad. I absolutely love throwing things in with cooked and cooled pasta and making a meal out of it.  So this is my pasta salad, that is usually eaten faster than I can make it.

Zesty Italian Pasta Salad

Ingredients:

  • 16oz bag of Spiral Noodles (any noodle works fine) * I switch my noodles up often, cooked with directions on the package.
  • 1 large cucumber, sliced, then quartered
  • half sweet onion, chopped
  • 1 can sliced black olives, drained
  • real mozzarella pearls, or mozzarella torn into bite size pieces
  • Italian dried salami  (I used Soppresatta), cut into bite sized pieces
  • zesty Italian dressing, 1 to 1.5 cups

Directions:

While I am boiling my noodles I prep all of the pasta salad add ins. I chop my vegetables and add them into the bowl. After that, chop the meat and add that into the bowl. Open and drain the can of olives, and add them into the bowl. Finally add in the mozzarella and Italian dressing, gently folding it all together.

Once the pasta has finished cooking, drain and rinse under cold water, until no longer warm. Gently fold in the pasta. Cover and refrigerate for at least 2 hours before serving.  Mix before serving to redistribute the dressing and enjoy. Yummers!

The best drink to go with the pasta salad is Lemonade.

Homemade Lemonade Directions:

For my lemonade, I squeeze the juice of lemons in a mason jar to equal 1 cup. (About 6 to 7 lemons, depending on size) I pour the cup of lemon juice into a pitcher and add 4.5 cups of water and 3/4 cups sugar. Stir until the sugar has dissolved in the lemon/water mixture. Add 3 slices of lemon to the pitcher and viola! Lemonade.
